Tasting note

Picota cherry red, good intensity and tile color. Complex nose, with aromas of fruit compote, plums and blackberries, over a spiced and smoked background, with tobacco and leather aromas. Powerful in the mouth, round with supple tannins, balanced acidity and long aftertaste.

Varieties

50% Garnacha, 30% Tempranillo and 20% Syrah

Type of cultivation

Selected and bush – trained lots with a growing background of 2,2 x 2,2 m., grown in dry land and with an age above 30 years in the case of the Garnacha, 20 years in the case of the Tempranillo, and more than 10 years for the Syrah of the Cariñena Designation of Origin, at an average height of 650 m.

Wine making

The grapes belonging to each variety are harvested separate, with our own hands at the optimal maturation time, the Tempranillo during the first two weeks in September, the Garnacha during the second two weeks in September, the Syrah during the first two weeks in September. Grapes are destemmed and put in deposits made of stainless steel separately in order to carry the alcoholic fermentation process at a temperature of 26º C during 12 days. Once finished, and regarding the wine coming from the bleeding – out process, we carry out the malolactic fermentation process and then put it in barrels made of French and American oak during 25 months. Afterwards, it is bottled according to the most strict hygienic conditions and remains there for the entire aging period ever since. .

Pairing

It combines with roasted or grilled red meat, game hunting (deer, wild boar, roe deer), stewed and boiled meat, foie – gras, Iberian cold meat, cured and blue cheese.
